
Miso Tahini Whipped Sweet Potato Bowl with Spiced Beans and Broccolini topped with Brown Sugar Toasted Pecans
This is a great vegetarian dish that can easily be made vegan. But it is far from lacking flavor and depth. Use this as an intricate side dish to roasted meat or all on its own.
Ingredients
For the mashed miso tahini potatoes
▢ 3 medium sweet potatoes
▢ 3 cloves of roasted garlic
▢ 2 tablespoon coconut oil
▢ ½ cup tahini
▢ 1 tablespoon cane syrup
▢ 2 teaspoon miso paste
▢ ½ teaspoon cinnamon
▢ salt
▢ pepper
For the spiced broccoli and beans
▢ 2 bunches broccolini, trimmed, stalks sliced in half
▢ 15 oz canned cannellini beans, drained and rinsed
▢ 1 tsp garlic powder
▢ 1 teaspoon onion powder
▢ ½ teaspoon smoked paprika
▢ ½ teaspoon salt
▢ ¼ teaspoon dried basil
▢ ¼ teaspoon black pepper
For the Toasted Sweet and Savory Pecans
▢ 1 cup pecans
▢ 2 tbsp olive oil
▢ 2 tablespoon cane syrup syrup
▢ 1 tablespoon garlic chili paste (more or less to taste)
▢ 1 tablespoon rice vinegar
Instructions
Preheat oven to 400°F. Line a baking sheet with parchment paper. Place potatoes on a parchment lined baking sheet and cook for 50-55 minutes or until fork tender.
Broccolini and beans
While potatoes are cooking – add 2 tablespoon of oil to a large skillet over medium heat. Add the broccolini and saute until a little char develops. Add just enough water to steam (about 2 tbsp) and cover. Let cook for 3-4 minutes. Should be softer, but not fork tender yet. Mix together the beans, garlic powder, onion powder, smoked paprika, salt, basil and black pepper. Stir together and cook for another 3-4 minutes.
Pecans
In a small pot over medium heat, add pecans and stir for 2-3 minutes to toast, careful not to burn. Add olive oil, cane syrup, chili paste, and rice vinegar. Stir together and let cook for 2 minutes, remove from heat.
Sweet Potatoes
When potatoes are done, remove from oven and carefully remove skin when cool to touch. Add to a large bowl with cloves of the roasted garlic, tahini, cane syrup, miso, cinnamon, salt and pepper. Mash with a potato masher or hand mixer until smooth.
Assemble:
To make your bowl, spread out a layer of mashed sweet potatoes, top with your broccolini and beans mixture, and add some of the pecan syrup mixture on top. Enjoy!
