Weekday Breakfast Burrito

Mornings are tough!

Let’s face it, we don’t have time to wake up like we want to. If you are like me you are usually rushed out of bed. I had to find something that was fast and satiating. A while back I created my whole morning routine around starting my day with gratitude, intention, and health. Through trial and error I found what I believe to be was the best routine for me. I share this in hopes you too can curtail a morning routine that sets your day strong.

So when the alarm goes off I get up and go to the kitchen and start the kettle for tea or coffee, turn on the oven to warm up the cast iron, scramble a couple eggs, and pull out the potatoes. One of the meal prep things I do is dice potatoes to use through out the week. So i toss them in a little oil salt and pepper and throw them in the air fryer. They cook for about ten minutes which allows me to go do my morning meditation. It’s quick but it lets me set intention for the day and it fits in my morning routine.

I head back to the kitchen and set up my coffee, put the eggs into the pan with a little oil and sprinkle the potatoes and any other filling i have. Here i used black beans and onions but the fillings are unlimited. the eggs begin to solidify and i sprinkle cheese on the top. Right before it completely cooks, I place the tortilla on top. I flip the whole thing over and roll the burrito. Once rolled, I let the tortilla get crispy on both sides. Done!

I slice them like sushi and put them in a container to take to work. I have time to finish getting ready for the day and look like I have it all together.

It took me a while to find this routine. Lots of frustrating mornings. But applied what we typically do in the kitchen when we have to make all the components of a plate come together at the same time. You strategically figure out how long each piece takes and the order of steps so when the plate arrives to the table everything is the same temp. I suggest making a list of all things you need (or want) to do in the morning. From there, determine how long each step will take and if there is anything you may need to do to prep the night before.

There’s no recipe

You need 2 eggs scrambled and a tortilla. As far as fillings its whatever you like. Herbs, vegetables, kimchi, cheese. The options are endless, and it makes a simple process not become monotonous. Grease your preheated pan with butter. pour in your scrambled eggs, sprinkle the eggs with whatever fillings you desire. Let it bubble and firm up. When the eggs are almost completely dry place your tortilla completely over the pan. Flip the tortilla and let it brown. Slide the burrito onto a cutting board and roll up. You can return the pan to toast further if desired. Slice it up and you are ready to go.
