
I am glad you stopped in for a visit. I have been in the industry for over 25 years. I have worked a variety of jobs in numerous kitchens. I love to cook. I love to make good food and share it with people.
I started blogging because I just wanted to record my work. Honestly its a place for me to geek out and hopefully find some others that enjoy talking food. Is it an obssession? I think it has to be.
Subjects you will find here will run the gambit. I like talking about historical, weird, funny, personal experiences with food. Dabble in herbal medicines like tinctures, teas, and oxymels. Stories about the impact of food or a dish. There is no niche here. I write about what I am thinking about.

I try my best to research and give accurate information. I will revise as time goes on or if I was not fully informed. Any opinions are mine, any faults of misinformation are mine. Recipes unless specified or linked are also mine.
Aside from safety we have no rules in or about the kitchen. And we still believe in being carefully dangerous. There isn’t a ‘right’ way to do anything. With the blending of cultures in this mixing pot of a country we have exposure to so many different styles, techniques, cookery. And in a place like the south those food ways are often hard to trace or unscramble. To say something is ‘right’ means to put bias on cultural practices. Food is subjective it is meant to arouse the senses and make you feel something. We are all attuned very differently so we experience food situationally- day to day or meal to meal.

My hope is that more people will come to the kitchen without feeling the need to ask for permission and use recipes as guidelines or inspiration. It’s true some ingredients are critical to the recipe, but if it’s for flavor or added texture you can omit or add as desired. Cook with your heart so you can taste the foods soul. Relying on a recipe takes the intuition we all have out of the equation.
In teaching kitchens, we often have one recipe and multiple teams. Every single item is always different. No two are ever the same. That’s because my idea of a cup of water is different to yours. My level spoon of powder also different. So, you most likely will make mistakes. Everyone does, so give yourself permission!
