Tomato Okra Tart

If you love tomatoes and okra there is no reason not to make this. The savory herbed crust is reminiscent of a biscuit. Roasted tomatoes and okra are tucked into a cheesy spread to make a perfect summer treat. Serve with a green salad and you have a perfect alfresco outing.

Tomato Tart

Ingredients:
  • one tart dough recipe
  • 2 lbs of tomatoes assorted sizes and color
  • handful of okra
  • 3/4 c white cheddar shredded
  • 8 oz cream cheese soft
  • 2 eggs
  • 1/4 c heavy cream (enough to loosen the cheese mixture)
  • garlic
  • jalapeno
  • cracked black pepper
  • pecans (optional)
Instruction:
  • tart dough par baked (link to technique page)
  • cream shredded cheddar, cream cheese, heavy cream, and eggs.
  • mix in the garlic, jalapeno, salt, and pepper (go easy, you season again). spread on the bottom of pie shells.
  • lay tomatoes and okra artfully on top pressing the vegetables into the cheese so it squishes around the sides.
  • brush top with olive oil and season again with salt and pepper.
  • bake for 20 minutes or until the veggies are roasted and soft and the cheese is bubbling.
  • let cool to almost room temp before serving
